What is different about polished cast iron verus normal cast iron?
Today’s modern cast iron is created by pouring molten iron into sand molds called casts. This allows easy manufacturing of the pans but gives a rough surface finish due to the unevenness and texture of the grains of sand.
Historically cast iron was then finished at the factory, similar to the processes we implement in our products.
However, over time companies realized they could sell a cheaper product to more people if they omitted the finishing steps. Thus, a race to the bottom began.
Our polished cast iron is simply a desire to return to the days where companies took pride in their products, and created things that not only lasted a long time, but were heritage pieces you could be proud of.
Our finishing process provides a refined and polished surface to the cast iron, which gives the pan a more even and smooth appearance. The application of the seasoning is therefore more uniform throughout the pan, granting you a better, and easier to use cooking experience. -
How are your polished cast iron pans made?
Our cast iron is 100% made in America by traditional sand casting. We then conduct a multi-stage finishing process including grinding, sanding, polishing, cleaning, and then apply multiple coats of oil typically referred to as “seasoning”.
-
What is seasoning?
“Seasoning” is another word for the natural non-stick coating that gets applied to the surface of the cast iron pans at the last stage of finishing.
We use all natural vegetable oil and high heat to polymerize the oils and seal the pan. This serves two purposes. The first is to provide a smooth, glass like surface to cook on. This helps prevent food from sticking and allows better control over the cook.
The second is that it provides a protective coating for the iron beneath preventing oxidation and rust. This ensures your pan will last for decades to come. -
Are the pans and seasoning safe?
Yes completely! Even safer than traditional non-stick pans. Our seasoning process is 100% natural and been used for centuries. It contains no PFOAs, PFAS, or PTFE like modern non-stick cookware.
Rest assured when you use our pans, you’re getting the best possible product out there to contribute to impeccable food safety for you and your loved ones. -
Can I use metal utensils in them?
Absolutely! Because our pans non-stick coating is made without the use of harmful and easy to scratch chemicals, you can use forks, spoons, tongs, spatulas and more to your heart’s content without the risk of damage.
-
What temperature are your pans rated to? Are they oven safe?
Yes! Our pans are completely oven safe.
The pans themselves are safe up to 1500 degrees Fahrenheit. However the seasoning is only rated to around 600 degrees Fahrenheit before it starts to break down.
Feel free to use your pans on the stove top, in the oven, as a deep fryer, on the camp fire, or nearly any other use case you can think of. -
Why do I see some pans as different colors on your website?
The different coloration in the pans signify how many times it's been through the seasoning process. After polishing and cleaning all pans are a shiny silver metal color. Through the first few stages of seasoning it will start to go copper, gold, brown, dark gray, and then eventually black.
All cast iron pans will eventually go completely black as they're taken care of and used over time. The smoother the finish, the more you'll see the black pop and shine.
-
Can I request a specific color on my pan?
Yes absolutely. Our default process involves shipping the pans out between the brown and dark gray stages involving 6-7 separate applications of seasoning over a 2 day process. However if you would like your pan to be earlier on the spectrum, or have more layers applied before receiving it please let us know via the form when adding it to your cart/checking out and we'll be more than happy to accommodate!

I've noticed some pictures on your website where the pans are polished to a near mirror finish. Why don't you sell your pans like that?
In order to reach that mirror like quality the metal has to be polished to be exceptionally smooth. And while it does look beautiful, the seasoning coating starts to have issues adhereing to a surface with that smooth of a finish. Resulting in a small risk that the non-stick coating starts flaking off after a few uses of cooking.
That's why we stop short of a mirror finish and make the surface smooth to the touch, but not flawless. Resulting in a better, more consistent, and more reliable cooking experience.
-
I still want a mirror finish pan, is that something you offer?
At the time this isn't something we offer, however feel free to contact us to discuss possible options.
-
I used my pan and now the color of the pan is spotted/patterned/darker/different, what gives?
Don't worry, this is completely normal! Because of the nature of the seasoning coating in cast iron pans being the same type of oil you cook with, over time your pan will naturally re-season and add to its coating. Giving it a darker appearance, and becoming more and more non-stick with every use.
Eventually the pan will be basically charcoal black with a slight sheen. This is considered the "end-game" of cast iron. When you can basically cook an egg in it without any additional oil or fat, you know you've made it.
